Baked Spaghetti Squash (GF)

Baked Spaghetti Squash

Serves: 4


1 large spaghetti squash, halved and seeded

3 Tbsp. butter or butter substitute like ghee

1 cup vegetable or chicken broth

2 Tbsp. parmesan cheese

salt and pepper to taste

Directions: (Follow substitutions for vegans)

1. Place squash with the cut side up in 9x13 inch pan

2. Fill squash with butter, cheese, salt and pepper

3. Add 1 cup broth to the pan

4. Cover with foil

5. Bake for about 50 minutes, until tender

6. Remove from oven and shred squash by running fork through it to make the spaghetti type strings

7. Sprinkle more parmesan on top before serving, if desired
