Beet Blood Orange Salad (DF,GF)

Beet Blood Orange Salad

Prep time: 50-60 minutes, including roasting beets

Serves: 4


8 baby golden or red beets

1/4 cup plus 2 Tbsps. olive oil

1 1/2 tsps. salt

1/2 tsp. pepper

1 blood orange

1 navel orange

4 cups mixed leafy greens

2 Tbsps. pistachios, chopped

1 Tbsp. Dijon mustard

1 Tbsp. apple cider vinegar or champagne vinegar


1. Preheat oven to 400 degrees

2. Wash and peel beets, cut in half if large

3. Brush beets with 2 Tbsps. olive oil and salt

4. Roast in oven on baking sheet for 40 minutes or until tender

5. While beets are roasting, make the vinaigrette by mixing the mustard, vinegar, remaining oil and salt/pepper in a bowl

6. Peel the oranges, removing the white pith as well and slice thinly

7. Place mixed greens on a platter and top with orange slices

8. Remove the beets from the oven and let cool

9. Place beets and pistachios on top

10.Drizzle vinaigrette over the salad and serve

The acidity of the oranges pairs beautifully with the sweetness of the beets and the colors look fab!
