Hey Sugar Fiends, Hope is on the Horizon!

Are you trying your darnedest to reduce your sugar intake and REALLY struggling? Well, some brilliant researchers are looking into a source of sweetness that would be natural, inexpensive, low calorie and without a bitter aftertaste. According to the Wall Street Journal, Amai Proteins, based in Tel Aviv, has created “designer” proteins that are way sweeter than sugar, sustainably grown, affordable, healthy to digest and -get this- grown in a lab! The company uses fermentation to grow the proteins in a lab to avoid the cost and supply chain logistics of growing crops.

Amai intends to have regulatory approval in 3 years, so until then, keep up the good fight against excess sugar, and use fruit, honey or real maple syrup to sweeten recipes. I’ll keep you posted.
