Spotlight on Avocados
Avocados are a popular super food for so many reasons. First of all, they are plentiful, affordable, and nutritious. Avocados contain protein, fiber, 12 essential vitamins, potassium and the good kind of fat that boosts the body’s ability to absorb said vitamins and function properly. They also help stabilize blood sugar and lower bad cholesterol. Avocados are also beauty boosters, helping skin and hair stay supple and shiny.
You can substitute avocados for butter, cream cheese, mayo, or olive oil in recipes. The creamy texture helps make baked goods soft. (Mash them before adding them to the batter). And of course, a smoothie wouldn’t be very smooth without -you guessed it-avocados!
A few tips on selecting and storing this amazing fruit. Yep it’s a fruit:
The darker the peel the better.
Test for ripeness by gently pressing the peel. It should give a little but not feel too soft.
Leave them on the counter unless you want to slow down the ripening process-then put them in the fridge.
They will ripen faster in a paper bag with a banana.
After cutting, if you aren’t using the entire avocado, squirt lemon juice on the flesh and store covered in a container in the fridge.
