Blueberry Baked Oatmeal

Blueberry Baked Oatmeal

Prep time: 60 minutes

Serves: 6-8

Ingredients:

2 cups old fashioned oatmeal, uncooked

2/3 cup toasted pecans, chopped

2 tsps. cinnamon

1 tsp. baking powder

1/2 tsp. salt 

1/4 tsp. nutmeg

1 3/4 cup milk (can substitute almond or coconut milk)

1/3 cup maple syrup or honey

2 large eggs at room temp so they don’t solidify the butter

3 Tbsps. butter or coconut oil, melted and divided

2 tsps. vanilla

2 1/2 cups fresh or frozen blueberries or any berry, divided

Directions:

Preheat oven to 375 degrees

Grease 9 inch square pan

In a medium mixing bowl, combine the oats, pecans, cinnamon, baking powder, salt and nutmeg and set aside

In a smaller bowl combine milk, honey or maple syrup, eggs, vanilla and half of the butter or oil

Place 2 of the cups of berries in the bottom of the pan (no need to defrost frozen berries)

Cover the fruit with the dry oat mixture

Drizzle the wet ingredients over the oats. Wiggle the pan to make sure the milk mixture penetrates the oats

Gently pat down any dry oats resting on top

Cover with remaining berries

Bake for 35-40 minutes, until top is golden brown

Remove from oven and let cool a few minutes.

Drizzle remaining butter on top before serving. Can serve with yogurt or a dollop of cream
