Chicken Quesadillas

Chicken Quesadillas

Serves 4


1 Tbsp olive oil

4 tsp. flour

1/2 cup unsalted chicken stock

1 cup chopped spinach

1 Tbsp. hot sauce ( like Cholula)

1/4 tsp. salt

1/8 tsp black pepper

6 oz. shredded rotisserie chicken

1 cup shredded mozzarella cheese

4 whole wheat flour tortillas (8 inch)

1 ripe avocado, quartered


1. Heat oil in small saucepan over medium heat

2. Sprinkle flour over pan, cook 30 seconds, stirring constantly

3. Slowly add the stock; cook 2 minutes, stirring until thickened

4. Remove pan from the heat, stir in spinach, hot sauce, salt, pepper, chicken and cheese

5. Set aside.

6. Heat large skillet over medium heat with a bit of oil

7. Divide chicken mixture evenly over half of each tortilla, then fold in half over filling

8. Brush olive oil on both sides of quesadillas

9. Add 2 quesadillas to the pan

10. Cook about 2 minutes on each side until cheese is melted

Repeat with remaining quesadillas

Cut each into 4 wedges and top with avocado wedge

Serve with salsa or hot sauce
