Dark Chocolate and Beet Brownies

Dark Chocolate and Beet Brownies

Prep time 50 minutes

Serves 12 people (and they will love these treats!) Little do they know they have vitamin C, potassium and protein


1 large pre cooked beet, peeled and chopped into small pieces (buy pre-cooked or roast in the oven wrapped in foil until soft)

1/3 cup fresh orange juice

1/2 cup flour ( can use white, wheat or gluten free flour)

1/4 cup unsweetened cacao powder

1 tsp. baking powder

1/4 tsp salt

4 Tbsp butter, butter substitute or coconut oil

6 ounces bittersweet chocolate, finely chopped

3 large eggs

2 tsp vanilla

1/2 cup walnuts, chopped (optional)


1. Pre heat oven to 350

2. Grease 8 inch square baking pan

3. Puree the beets with orange juice in a blender

4. In medium bowl, combine flour, cacao, baking powder, salt

5. Melt butter and chocolate in the microwave stirring often or in a double boiler until smooth

6. Add eggs one at a time until well blended

7. Stir in beet puree and vanilla

8. Add flour mixture to the chocolate beet mixture and mix well

9. Add nuts, if desired and pour into baking pan

10. Bake for 25-30 minutes. Let cool before cutting to serve
