Easy Grain Bowls

This is a quick, “wing it as you go” dish for lunch or dinner.

Start with a base of cooked brown or white rice or quinoa, wheat berries…you get the idea

Add sliced avocado, grated carrots, watercress, arugula or kale

Top with flax seeds, pumpkin seeds or sliced almonds for protein and essential omega 3 fat

Sprinkle parmesan cheese and black pepper, if you like and dress with lemon or lime vinaigrette

Asian version:

Top the cooked rice or grain with snow peas or sugar snap peas, shredded cabbage, scallions, chopped red pepper, peanuts and cilantro or mint

Sprinkle a peanut dressing or vinaigrette over the top

Mediterranean version:

Top the cooked rice or grain with chopped tomatoes, sliced fennel, parsley, pepperoni, feta cheese, sliced black olives

Sprinkle balsamic dressing over the top
