Easy Granola (DF)

Easy Granola

Prep time: 40 minutes

Serves: 6

Ingredients:

2 cups oatmeal-not the quick cooking type

1/4 cup sliced raw almonds, or any nut you like such as pecans, cashews

1/4 cup pumpkin seeds or chia seeds or flax seeds (or a mixture of all three, depending on what you have on hand)

1/4 cup real maple syrup

1 Tbsp. coconut oil, melted

1/4 cup flaked or shredded unsweetened coconut (can omit if you’re not a fan)

1/2 cup dried cherries, dates or cranberries

1/4 tsp salt

1/4 tsp cinnamon

Instructions:

Pre heat oven to 300 degrees

Combine oil, syrup, spices, seeds and oats in a bowl-mix well

Spread mixture on large rimmed sheet pan

DON’T ADD FRUIT, COCONUT OR NUTS UNTIL IT COMES OUT OF THE OVEN

Bake for 25-30 minutes, mixing about every 7 -10 minutes, until golden brown

Remove from oven and mix in fruit, nuts, coconut

Let stand to cool

Granola will keep up to 3 weeks in a covered container in the pantry.

Serve with yogurt, fresh berries or milk
