Egg Frittata


Prep time: 20 minutes
Cooking time: 15-20 minutes

Yields 4 servings


  • 8 eggs, beaten and seasoned with salt and pepper
  • Choose one or two: 1/2 cup cooked scallions, potatoes, tomatoes, red peppers
  • Choose one: crumbled cooked bacon, ham or sausage
  • Choose one: grated cheddar, parmesan or mozzarella
  • Chives or basil, if desired
  • Choose one: flavor boost—dijon mustard, sriracha or citrus zest


  1. Warm 1 T olive oil in an oven proof skillet on medium high heat on stove
  2. Add egg mixture and cook until you can pull up the edges with a spatula and let the runny eggs from the center fill in
  3. Cook one to two minutes then transfer to the oven at 350 degrees for about 15 minutes, depending on how many eggs you have used
  4. Do not overcook
  5. Cool 5 minutes before cutting and serving

NOTES — This is a dish which can be modified to your taste-add bacon, sausage, cheese, or make it vegetarian-whatever you prefer for brunch, dinner or lunch
