Eggs Baked in Avocado

Prep time 30 minutes

Ingredients:

Avocados, pitted and halved

Eggs

Grated cheese

Salt and pepper

Directions:

Pre heat oven to 375

Place halved avocados in a muffin to keep them stable while baking

Beat eggs with salt and pepper in a medium bowl (one egg fills two avocado halves)

Pour eggs into the avocados and top with grated cheese-your choice

Bake for 15-20 minutes until eggs are at desired hardness

Serve with whole grain toast
