Three Ingredient Pancakes


Prep time: 15 minutes

Serves 1 Yields 3 pancakes


  • 1 ripe banana, medium size
  • 2 Tbsps. whole wheat flour
  • 1 large egg


  1. mash banana with a fork until smooth
  2. Place in a bowl and whisk together with the egg
  3. Add flour and mix
  4. Heat a skillet over medium-high heat with a bit of coconut oil or butter substitute like ghee
  5. Spoon the batter into the skillet in small round shapes
  6. Cook 2 minutes until tops are bubbled
  7. Carefully turn pancakes over with a spatula and cook 1-2 more minutes, until pancakes are light brown
  8. Enjoy for breakfast with a dollop of jam or berries or real maple syrup
