Lemony Chicken and Sage

 Prep time: 15-20 minutes

Serves 2


2 skinless boneless chicken breasts

6 fresh sage leaves

4 strips of prosciutto

2 tsp. olive oil

1/4 cup fat free low sodium chicken broth

2 Tbsp. fresh lemon juice

1/2 tsp corn starch


1. Wash chicken breasts and pat dry with paper towel

2. Place 3 sage leaves on each chicken breast

3. Wrap prosciutto around each piece of chicken, securing sage leaves. (Can use toothpicks, if desired)

4. In a small bowl, combine broth, lemon juice, corn starch. Whisk together

5. Heat skillet with 1 Tbsp olive oil over medium heat

6. Add chicken and cook at lease 5 minutes on each side, depending on thickness of the chicken

7. When cooked through, remove chicken to a 8x8 or 9x9 inch pan, cover with foil and keep warm in low oven

8. Add broth mixture and remaining olive oil to skillet and bring to a boil

9. Stir constantly with a whisk until thickened

10. Spoon sauce over chicken and serve

May be paired with asparagus or green beans
