Peanut Butter Energy Bites

Peanut Butter Energy Bites

Prep time: 15 minutes plus chill time- no need to bake!

Makes about 20 bite size balls packed with protein and Omega 3 healthy fat


1 cup uncooked oatmeal (not the quick cooking type)

1/2- cup toasted coconut flakes or shreds

1/2 cup peanut butter or any nut butter, low in sugar

1/4 cup ground flax seed or wheat germ

1/3 cup honey or maple syrup (can use chopped dates as an alternative)

1 Tbsp chia seeds

1/2 cup chocolate chips or dried cherries or cranberries, chopped into small pieces


1. Place oatmeal, coconut and dates (if using) in a food processor and process until pretty fine

2. Stir all ingredients in a bowl until thoroughly mixed

3. Cover and chill in fridge for 1 hour

4. Remove from fridge and roll into bite size balls

Keep in an airtight container in fridge for about 1 week. Try to be inventive with the ingredients!
