Peanut Chicken in Lettuce Wraps (DF/GF)

Peanut Chicken in Lettuce Wraps

Serves: 8


1/4 cup peanut butter

1 Tbsp. fresh lime juice

1 Tbsp. fish sauce

2 Tbsps. packed brown sugar or honey

1/2 Tbsp. white vinegar

1 serrano chile, seeded, minced (optional)

1 garlic clove, peeled, minced (optional)

1 lb. cooked ground chicken, turkey or pork

8 radishes, thinly sliced

1 mango, peeled, chopped

2 Tbsps. canned coconut milk

2 scallions, chopped

1/3 cup peanuts

1 cup fresh mint, chopped

1 Tbsp. fresh ginger, peeled and grated

1 head Boston lettuce leaves, washed and dried 


Mix the first 7 ingredients in a large bow

Add the meat, ginger, mint, scallions, coconut milk and mix well.

Place a scoop of the meat mixture in lettuce leaf, top with peanuts, radishes, mango

Repeat. Yum!
