Pork and Pineapple Sliders (DF)

Pork and Pineapple Sliders

Prep time: 20 minutes

Serves: 4


8 oz. ground pork

1/2 cup scallions, sliced, divided 

1/2 tsp salt, divided

1/2 tsp. black pepper, divided

8 slices fresh pineapple

1 cup cabbage, shredded

8 whole wheat or gluten free buns

olive oil to coat the skillet

For the sauce:

Shortcut -use jarred BBQ sauce or:

1/4 cup ketchup

2 tsps. brown sugar

3 Tbsps. pineapple juice, divided

2 Tbsps. apple cider vinegar, divided


If you are making the sauce from scratch, combine ketchup, sugar, half the pineapple juice and half the vinegar in a bowl

In a separate bowl, combine the pork, half the scallions, half the salt and pepper

Form meat mixture into 8 patties

Place oil in a skillet and heat over medium -high heat

Add the patties to the pan, cook 2-3 minutes until seared, then flip and cook until cooked through

Transfer the patties to a plate and cover with foil

Add pineapple to the skillet and cook until slightly charred

Top patties with pineapple slices and cover

Combine cabbage, remaining pineapple juice, vinegar, scallions, salt and pepper in a bowl

To assemble sliders, brush sauce on the bottom of the bun, add pork, pineapple slice and cabbage slaw then top with the top of the bun

The patties can also be grilled outdoors
