Quinoa Salad with Fresh Herbs


Prep time: 20 minutes
Cooking time: 12-15 minutes

Yields 4 servings


  • 2 cups quinoa (can use wheat berries or bulgar wheat if you aren't worried about gluten)
  • 3/4 cup chopped dates
  • 3/4 cup chopped parsley and mint
  • 1/4 to 1/2 cup olive oil
  • 3/4 cup fresh lemon juice and zest from 2 lemons
  • 1/2 cup chopped pistachios or pecans
  • 1/2 cup golden raisins, craisins, or dried apricots
  • Salt and pepper to taste


  1. Rinse the quinoa under running water
  2. Place cinnamon and salt in recommended amount of water from the quinoa package in a pan 
  3. Cook on the stove according to instructions on the package, making sure the water is absorbed
  4. Pour quinoa on a cookie sheet and let cool 15-20 mins.
  5. In a large bowl, combine all of the ingredients with the quinoa and chill for one hour or overnight

NOTES — This salad pairs well with grilled chicken or pork.
