Roast Chicken with Orange

 

Prep time: 10 minutes
Cooking time: 1 hour 30 minutes

Yields 2 servings

INGREDIENTS
ROASTING CHICKEN

  • 1 orange
  • 1 onion
  • Fresh or dried rosemary
  • Salt, pepper
  • 1/2 cup white wine

GLAZE

  • 3 T butter or ghee (butter substitute)
  • 3 T dijon mustard
  • 3 T honey
  • 1 T orange marmalade or apricot jam
  • 3 t grand marnier liqueur,if desired

DIRECTIONS

  1. Preheat oven to 400 degrees
  2. Line a roasting pan with foil
  3. Rinse chicken inside and out, then pat dry
  4. Squirt orange juice into the cavity and all over the top of the chicken
  5. Quarter the onion and the orange peel and place in the cavity
  6. Pour 1/2 cup wine over the chicken
  7. Sprinkle top of chicken with rosemary, salt and pepper and rub it in
  8. Roast in the oven for 35 minutes
  9. Mix all of the glaze ingredients together
  10. Reduce oven temp to 350 degrees
  11. Spoon glaze over chicken
  12. Roast another 60 mins. basting often, until chicken is nice and brown
  13. Enjoy!
