Chili Lime Roasted chickpeas (DF GF)

Chili Lime Roasted Chickpeas

Prep time: 50 minutes 

Makes 2 cups


2 cans chickpeas, (15 oz each) rinsed, drained and patted dry

2 Tbsps olive oil

1 Tbsp chili powder

2 tsp ground cumin

1 tsp lime zest

1 Tbsp lime juice

3/4 tsp sea salt


Preheat oven to 400

Line a 15x10”baking pan with foil

Spread the drained chickpeas in a single layer on the baking pan (remove any loose skins)

Bake for 40-45 minutes until very crunchy-stirring often

Meanwhile, mix all of the spices and oil, juice together

After removing the chickpeas from the oven, let cool at least 5 minutes

Drizzle chickpeas with the mixture, coating completely

Cool, then store in an airtight container

You may substitute dried rosemary or curry powder for the cumin, lime juice and chili powder

Chickpeas are high in protein and fiber. A real fave of vegans and vegetarians!
