Sun dried tomato pasta salad

Prep time 30 minutes plus time to chill

Serves 4

Ingredients:

1/3 cup fresh kalamata olives, pitted

1/3 cup feta cheese, crumbled

1/3 cup sundried tomatoes, drained if from a jar or rehydrated if dried

1/2 cup arugula

1/4 cup fresh basil, chopped

2 cups penne or bow tie pasta (Use whole wheat if you like or gluten free pasta)

1 Tbsp. red wine vinegar

3 Tbsp. olive oil

Salt and pepper to taste

Directions:

1. Whisk the oil and vinegar for the dressing

2. Cook the pasta according to the instructions on the package

3. Drain the pasta and let it cool, then place in a medium bowl

4. Add the rest of the ingredients to taste. Chill in the fridge or serve at room temperature.

*Add cooked chicken if you want to ramp up the protein
