Thai Tomato Red Pepper Soup

Thai Tomato Red Pepper Soup

Prep time: 20 minutes

Serves: 4

Ingredients:

16 oz. container roasted red pepper tomato soup (Trader Joes’ is great, but any brand will do)

1 cup coconut milk

1-2 tsp. red curry paste

1/2 cup red bell pepper, diced

2 cups fresh mushrooms, diced ( I used portobello)

1 cup rotisserie chicken, shredded

3 Tbsps. cilantro, stemmed and chopped

Directions:

Saute the red pepper and mushrooms over medium heat in an oiled skillet and set aside

Combine the soup, coconut milk, red curry paste in a medium saucepan

Heat 5 minutes, stirring often

Add the peppers, mushrooms and chicken

Simmer for 5 minutes or more, if desired

Add the cilantro, stir and serve

When my husband was out of town for a week, I ate this entire batch by myself!
