Tomato Soup


Prep time: 20 minutes
Cooking time: 45-60 minutes

Yields 6 to 8 servings


  • 2 T olive oil
  • 1 med. minced onion or 2 scallions, finely minced
  • 1 clove garlic, minced (optional)
  • 2 T flour (can use gf flour)
  • 3 cups chicken or veggie broth
  • 1 28 oz can crushed tomatoes
  • 2 T tomato paste
  • 1 1/2 t sugar
  • Few sprigs fresh thyme, chopped fresh basil
  • Salt and pepper
  • Chives, sour cream or grated parmesan cheese as garnish on top when serving, if desired. (omit if you want dairy free)


  1. In a soup pot or dutch oven, heat the oil over low heat on the stove
  2. Add the onion, garlic or scallions and cook til fragrant, not brown
  3. Add flour and stir to coat
  4. Add rest of ingredients, bring to a simmer over medium heat while stirring to make sure nothing is sticking to the bottom of the pot
  5. Salt and pepper to taste
  6. Reduce heat to low and cook for 45 to 60 minutes
  7. When ready to serve, discard the time sprigs
  8. Serve in bowls, adding a dollop of sour cream or chives or grated parmesan cheese (optional)

NOTES — This soup is good without the garnish and really warms the soul on a cold, wintry day!
